A few things going on here at Moor View, the buttercups have been out for a few weeks already and are just beautiful! These little flowers are simply so joyful with their bright yellow faces :o)
Yesterday saw me baking up a storm - two ginger loafs and a great big batch of white and dark choc-chip cookies. The next few days are going to be full of cooking meals and baking yummy things to take with us on our boating holiday on the Norfolk Broads on Thursday and packing of course - (and all that goes with that! Making sure all the clothes are clean etc) - Whew!
A while ago I posted '10 Easy Homeschool Lunches' - a few lunch ideas that we use in our home to feed hungry teenagers who have been expending lots of brainpower! Well, I have another great idea to add to that list. For yesterday's lunch I made vegetable pikelets.
It's like a mini pancake or drop scone - but healthier. It's a great alternative to bread, my girls get bored of having bread offered to them too often. The pikelets can be topped with anything, cream cheese, cheese, salad - whatever takes your fancy.
They are super easy and quick to make, here's the recipe:
2 cups wholemeal flour (we use organic stone-ground)
2 cups raw veg of your choice (in these ones I used grated carrot and fresh corn cut from the cob)
1 level tsp baking powder
1 cup grated cheese
1.5 cups milk
salt and pepper to taste.
mix all the ingredients together until well blended.
Melt a little butter in a pan, then drop a well heaped dessertspoon of the mixture into the pan. Allow to gently brown on one side before flipping over to cook the other side.
Serve with a healthy crunch salad.
This went down a treat yesterday! Initially I had moans and groans because I was putting in raw veg, but once they tasted the finished meal I was assured that it was one of the best ever and I can make it again :o)
